First, the preparation of sugar

Choose 50 kg of white granulated sugar, add clean water, and stir to make the sugar fully soluble in water.

Second, the tanning method

Before cooking, add the vegetable oil in the interlayer of the sandwich pot, then pour the prepared sugar into the upper pot and make it with fire. When the sugar liquid is boiled for 5-6 minutes, 0.5 kg of the saturated white peony solution at room temperature is added, and the mixture is stirred while mixing thoroughly. Measured with a thermometer, when the temperature in the sugar solution rises to 150°C, stop the fire and cool the pan. When the pan is out, the temperature is preferably 115-120°C.

Third, the crystallization method

The pan sugar liquid was put into the pan and placed on the pit with a clean cotton quilt. The temperature inside the pan was maintained at about 90°C. After that, the temperature was lowered to 10°C per day and dropped to the seventh day. If the temperature is not enough, the fire temperature can be raised to increase the pit temperature. Under normal circumstances, the sugar liquid is not afraid of heat during the crystallization process.
